Warm Spinach Salad with Pancetta

This a fairly quick and easy salad to make, you can use bacon instead of the pancetta, just cook it a bit longer than you would for pancetta.
4 slices pancetta or 2 slices bacon, cut into small pieces
6 cups or so spinach 1/2 red onion, sliced, 2 cloves garlic, sliced, 2 Tbls olive oil, 3 Tbls balsamic vinegar, parmesan cheese, s&p
Heat olive oil over medium heat. Add onions, garlic and pancetta and saute about 5 min. Take pan off heat and add balsamic vinegar. Pour this over spinach in salad bowl and toss. Add parmesan and toss again.
You could use other cheeses as well, feta would be good.
Add your own touches,a hard boiled egg, some pine nuts…
Remember to taste before adding salt.
